25 elderflower heads
1.5 litres boiling water
1 kg sugar
50g citric acid (available from chemist or online)
4 lemons sliced
Dissolve sugar in boiling water and then add all other ingredients. Leave in cool place for 24 hours for flavours to infuse.
Strain through some muslin placed in colander and pure into sterilised bottles.
Use as a cordial - great with sparkling water or wine. Refridgerate once opened
