1.5 kg sloes
1 kg crab apples
500 g blackberries
500 g elderberries
600 ml water

Notes: alternatives can be added or substituted depending what is available in your local hedgerow – bullaces or wild plums work well. If you are unable to access crab apples replace with cooking apples or any English variety of eating apples, windfall will work well.
Wash fruit well and chop apples. Put all the fruit and water in top a preserving pan and cook until tender. Rub through a sieve and weigh the pulp. To each 600 ml of pulp add 500 g of sugar. Return the pulp and the sugar to the pan and stir over a low heat until the sugar has dissolved. Boil rapidly until setting point is reached. Then pot and cover. Yields about 3.5 kg
